Pork Spare Ribs
Whey-fed pork is a specialty that is truly a part of regenerative agriculture. River's Edge Dairy supplement their pastured pigs with whey left over from cheesemaking. Whey is a complete protein for pigs being an alternative to feeding grain. Traditionally, pigs were taken to the butcher in the autumn, when the dairy animals had dried up, and all other forage was frozen.
Also called side ribs, spare ribs are an iconic pork cut. Imagine baked bacon in BBQ sauce. Easy to prepare in the oven or on the BBQ.
