We are a small dairy. I mean really small. It's just the two of us. We see our small size as a good thing. Being small means we can make lots of unique and interesting items on the farm. We aren't committed to doing large volumes of one thing.
Although make lots of things, our specialty here is making sheep milk gelato. We have a small, commercial batch freezer in our on-farm commercial kitchen. We hand make everything in small batches. Not a lot of automation here on farm, but what we do have, suits us well.
